Diced Radish Kimchi

Chae's recipe of Diced Radish Kimchi, which outside of cabbage kimchi, is the most common kimchi that's enjoyed in Korea.

    Peel radish, dice into bite-sized pieces.

    Sprinkle with salt, leave for 1 hour then quickly rinse with cold water.

    Mix all seasonings together.

    Mix radish and seasoning. Cover and leave to ferment for 24hr at room temperature. Transfer to fridge and continue to ferment for 7 days before enjoying.
