Always ensure you are only shucking and eating oysters that have remained closed.

Ideally bring your oysters home with an ice pack to keep them chilled, and put them straight into the fridge when you get home.

If you are pre shucking your oysters before your guests arrive, put them upright in a tray with their top shells back on to ensure they don’t dry out, and leave them in the fridge to store.

Best to be safe and consume them on the same day they have been shucked.

Look for any obvious signs of spoilage, and off smells, and don’t consume if you are not sure they are safe to eat!
