Scallops in Nori Butter
A simple scallop dish to impress your guests.

Toast nori carefully over a flame or in a hot pan, crumble, crush, or blitz into a rough powder and fold well through the butter.

Roll up the butter in some baking paper, and leave on your fridge for later.

Prep your spring onion by cutting a few thin slices and setting them aside.

Prepare your serving plates by placing a spoon of the wet salt on each, and nestling in the scallop shell.

Place a pan over medium-high heat, add plenty of salt and a little oil to the pan.

Once hot, add your scallops and press gently for good contact.

Check after a minute to see how they are cooking.

Once a good sear (1-2min) has been achieved, add your butter, flip the scallops and reduce the heat.

Baste the butter over the scallop to finish cooking them through, 30s-1min.

Plate the scallop hot into the shell, and spoon over some of the brown nori butter.

Add a little spring onion, and serve with a squeeze of lemon.
