Mum's Banana Bread

    Add butter and sugar to the bowl of a stand mixer, and beat together until well combined.

    Add eggs, and beat together.

    Add flour, baking powder, baking soda, and salt. Briefly mix together to combine.

    Add half the milk, and the vanilla extract. Mix together well.

  5. 5

    Add half the banana, mix well.

    Add remaining milk, mix well.

    Add last of the banana, and mix well.

    Preheat oven to 180°c, or 160°c fan forced.

    Line a loaf tin with baking paper, and fill with banana bread batter.

    Bake for +/- 1 hour, until a skewer inserted into the middle pulls out cleanly.

    Leave to cool for 5 minutes, then turn out onto a cooling rack.

    For best results, allow to cool, then place in a sealed container overnight to mature before eating the next day.
