There’s nothing quite like a big bowl of Red Beans & Rice, especially when it’s filled with spicy andouille sausage & smoky bacon. This recipe is easy to whip up and the whole family will be begging you to make it over and over again!

    Add your beans to a large pot & place the smoked ham hocks on top, then cover them in water and bring to a boil.

    Let boil for 10-15 minutes, then cut the heat, cover them and let them sit for about an hour.

    Drain the beans & give them a good rinse. Set aside.

    Add the beef tallow (or oil) to a pot, then add the bacon and cook until slightly crispy, then set aside.

    Add the andouille sausage to the same pot and cook until brown, then set aside.

    Add the onion, celery, bell pepper, green onion, & garlic down into the bacon & sausage grease and cook until soft.

    Add the bone broth, then add the beans, meat, and seasoning.

    Give it a good mix, then cover and let simmer for 1 to 1-1/2 hours (or until the beans are soft).

    Remove 1 cup of the beans and mash them, then add them back to the pot.

    Let simmer for 30-45 more minutes, then serve with white rice & green onions.
