Cut the chicken into bite-sized pieces and season with the listed ingredients. Marinate for at least 1 hour or overnight for more flavor.

In a small bowl, combine all the seasoning mix ingredients and set aside.

Add the sweet potato starch and baking powder to a shallow bowl and toss the chicken pieces in the mixture, coating them evenly.

Fry the chicken in small batches at 350°F for about 3-4 minutes or until lightly brown. Repeat with the remaining chicken.

Double fry the chicken until crispy and golden brown.

Add fresh basil for 30 seconds.
