Directions

  1. 1

In a large bowl, mix the flour, yeast, salt, and sugar. Slowly add the lukewarm water and olive oil, stirring until combined. Knead the dough for about 5-7 minutes until it becomes smooth and elastic.

  2. 2

Cover the dough and let it rise in a warm place for 1-2 hours until doubled in size. For more flavor, you can refrigerate the dough overnight and let it come to room temperature before proceeding.

  3. 3

While the dough is rising, melt the butter in a pan over medium heat. Add the diced apples, sugar, cinnamon, and vanilla extract. Cook until the apples are soft and caramelized, about 5-7 minutes. Set aside to cool.

  4. 4

Punch down the dough and divide it into 3-4 pieces, depending on the size of your muffin tin. Grease the muffin tin with olive oil and press a piece of dough into each cup.

  5. 5

Spoon the cooled apple pie filling into each dough portion and dimple into the dough.

  6. 6

Let the shaped muffins rest for another 30-45 minutes in a warm place, until slightly puffed.

  7. 7

While the dough rests, preheat your oven to 450°F (232°C).

  8. 8

Drizzle a little olive oil over the top of each muffin for a crispy finish. Bake for 15-20 minutes, or until the muffins are golden brown.

  9. 9

If using, whisk together the powdered sugar, water, and vanilla extract. Drizzle over the muffins!
