In a large bowl, mix the flour, yeast, salt, and sugar. Slowly add the lukewarm water and olive oil, stirring until combined. Knead the dough for about 5-7 minutes until it becomes smooth and elastic.

Cover the dough and let it rise in a warm place for 1-2 hours until doubled in size. For more flavor, you can refrigerate the dough overnight and let it come to room temperature before proceeding.

While the dough is rising, melt the butter in a pan over medium heat. Add the diced apples, sugar, cinnamon, and vanilla extract. Cook until the apples are soft and caramelized, about 5-7 minutes. Set aside to cool.

Punch down the dough and divide it into 3-4 pieces, depending on the size of your muffin tin. Grease the muffin tin with olive oil and press a piece of dough into each cup.

Spoon the cooled apple pie filling into each dough portion and dimple into the dough.
