Pumpkin Oatmeal Chocolate Chip Cookies

Not your typical oatmeal chocolate chip cookies, but so perfect for the coming fall!

    Preheat oven to 350°F and line a cookie sheet with parchment paper.

    Combine vegan butter with sugar, vanilla, salt, pumpkin purée, and flax egg.

    Once combined add the oats, flour, baking soda, and pumpkin pie spice.

    Roll dough into balls and place on baking sheet. Flatten dough down slightly.

  5. 5

    Bake for 11-13 minutes. Tap baking sheet with cookies gently on counter out of oven to help flatten them more.

    Top with flaky sea salt if desired and let cookies cool on sheet before eating!
