A festive vegan cookie recipe for Halloween

    In a bowl cream together the vegan butter and sugar.

    Add in the vanilla, egg replacer.

    Next combine in the flour and baking soda.

    Separate the dough into thirds. Leave one ball plain, dye one yellow, and the other orange.

    Line a Tupperware with parchment paper. Press down the non dyed dough first followed by the orange then yellow.

    Cover with another sheet of parchment and place the lid on it.

    Let dough chill in the fridge for at least 90 minutes (2 hours is best).

    Preheat oven to 350°F and line 2 pans with parchment paper.

    Slice the dough about inch sized and then make the candy corns by cutting triangles out of the slices of dough.

    Place cookies on sheet and bake for 6-7 minutes or until the edges are just set.

    Let cool on baking sheet then enjoy!
