Nourish the Soul Bowl

Place a small sauce pan on a medium low heat and add the coconut oil followed by the ginger and white part of the spring onion. Cook until softened and fragrant.

Add the chicken stock and increase the heat to medium.

You could either poached the chicken in the broth, or if there isn’t enough broth to cover the chicken then poach in a separate pan. Bring water to a steady simmer and add the chicken and cook for about 8-10 minutes on a low heat, don’t let it boil. Remove from the broth/ water.

Add the noodles to the broth and cook for a minute or so before adding the swiss chard.

Stir in the honey and vinegar and bring this to a steady simmer. Remove from the heat when the noodles are cooked.

Serve with avocado, miso and the rest of the green onion.
