One Pan Chicken Caprese

Simple, low stress cooking using @muttipomodoroau Sugo Semplice Basil Pasta Sauce as the flavour base to simmer the chicken in.

    Season chicken with extra virgin olive oil, dried herbs, paprika and salt and pepper. Chili flakes are optional.

    Heat a large oven safe frypan on medium high.

  3. 3

    Add chicken and cook on each side for approx 4 minutes or until cooked through.

    Remove chicken from the pan and set aside.

    Add baby spinach and sauté until just wilted.

    Add Mutti Sugo Semplice Basil and Mutti Cherry Tomatoes and simmer to heat through for 2 minutes.

    Return chicken to the sauce.

    Dollop basil pesto over the pan and top with mozzarella.

    Place under the grill for a few minutes until the cheese is bubbling and golden.

    Serve with crusty bread and fresh basil.


Notes

chicken tenderloins will cook faster. If you are using chicken breast and it’s very thick, flatten with a mallet, or slice in half to reduce the cooking time. Tinned cherry tomatoes are a great substitute for fresh.
