Broccolini Salad with Buttermilk Dressing

Buttermilk dressing

    Make dressing by whisking all ingredients together in a jug. Season well with salt and pepper. The longer it infuses the better the flavour will be. Taste and adjust as needed.

    Cut broccolini into smaller lengths.

    Bring a pot of water to the boil.

    Prepare a bowl with ice and cold water.

  5. 5

    Add broccolini to the boiling water to blanch quickly. 30 seconds to 1 minute is all it needs.

    Transfer it to the ice cold water.

    Dice bacon and add to a frypan on medium heat. Cook stirring often until crispy and golden. Transfer to a plate lined with paper towel to absorb any excess oils.

    In your serving bowl add rocket and baby spinach.

    Add broccolini, danish feta, seeds and bacon.

    Add buttermilk dressing as desired and toss to coat. Enjoy!


Notes

store extra dressing in a jar or airtight container or jar for up to 1 week. Broccoli would be a great substitute for broccolini. Use 2 smaller heads.
