Lemon Potatoes (Patates Lemonates)

Ingredients

    Preheat oven to 200°C.

    Slice potatoes in half, and then into thin wedges.

    Add potatoes to a large stainless steel baking tray.

    Juice lemons and use a measuring jug to get 200ml of juice. Pour lemon juice over potatoes.

    Pour chicken stock over potatoes.

  6. 6

    Drizzle olive oil over potatoes.

  7. 7

    Season with salt and pepper and sprinkle with oregano.

  8. 8

    Bake for 1.5 hours in total. At the one hour baking mark, turn the potatoes with a spoon so they brown more evenly.


Notes

Note: for a more subtle lemon flavour use only 125ml lemon juice.
