Japanese Curry Inspired Cottage Pie
Bring a bit of magic to dinner with this Japanese Curry Inspired Cottage Pie recipe.

Heat a large oven-safe frypan on medium.

Add extra virgin olive oil and cook onion and garlic for 5 minutes, until softened.

Add mince and increase heat. Cook breaking it up with a spoon to prevent lumps forming - about 6 minutes.

Add Japanese Curry Sachet and cook stirring for 1 minute.

Add tomato paste and cook for another minute.

Add soy sauce and stock.

Add mushrooms and frozen veg mix and stir to combine.

Cover and simmer gently for about 10 minutes.

Meanwhile mix 1 heaped tablespoon of cornflour with a little bit of water to form a slurry. Add this to the mince to thicken the sauce.

Stir through baby spinach until just wilted. Remove from the heat.

Preheat oven to 220c.

Arrange potato gems on top of the mince. Spray lightly with olive oil.

Bake for 30 minutes until the gems are golden - enjoy!
