Ingredients

Directions

  1. 1

Finely chop onion, carrot, celery, and garlic.

  2. 2

Finely slice parsley and celery leaves.

  3. 3

Heat olive oil in a large saucepan or cast iron pot on medium.

  4. 4

Add chopped onion, carrot, and celery. Cook, stirring occasionally for 15 minutes.

  5. 5

Add garlic, parsley, and celery leaves. Cook for a further 5 minutes.

  6. 6

Add mince and cook, stirring often until cooked through. Add wine if using it now.

  7. 7

Add tomato passata and tinned tomatoes. Stir to combine. Season with salt and pepper.

  8. 8

Simmer on low for 3 hours covered with the lid.

  9. 9

Stir occasionally to prevent it sticking to the bottom of the pot.

  10. 10

Remove lid and simmer for a final 1 hour at a gentle bubbling simmer.

  11. 11

Check seasonings and add salt and pepper as desired.

  12. 12

Cook pasta in a large pot of salted water until al dente.

  13. 13

Drain well and reserve 1 cup pasta water.

  14. 14

Add your desired amount of Bolognese sauce to the pasta pot and heat on low.

  15. 15

Return pasta to the pot, pasta water, and coat in sauce, heating it through for a few minutes.

  16. 16

Serve Spaghettoni with a generous amount of grated Pecorino.

  17. 17

Leftover bolognese can be frozen in airtight containers for a future meal.
