Is it finally salad season?? the reason you don't like potato salads is because the ones you've been eating are crusty...this one is banging you won't wanna miss it

    Place the new potatoes in cold salted water and bring to a boil. Cook until tender (about 15-20mins from boiling starts).

    Drain (use the water to simmer the samphire too for 5mins).

    Once you're able to touch the potatoes whilst hot, cut them into half (it should be steaming as you cut through).

    Add in the extra virgin olive oil, lemon juice and zest, salt and black pepper to taste and mix thoroughly - set aside and chop up your herbs.

    Chop and add the herbs to the potatoes, alongside the mayo/yogurt and mustard.

    Cook your vegan bacon according to the instructions and add the breadcrumbs and nutritional yeast 2mins before the end.

    As the bacon is cooking, finely chop your red onion and celery and add to the potatoes too.

    Lastly, serve and sprinkle the bacon/breadcrumb mix and a dash of paprika to top it off.
