1. 1 lime juice
2. 1 chipotle chilli
3. 2 tbsp olive oil
4. 2 cloves garlic
5. 1 tbsp balsamic vinegar
6. 1 tsp cumin
7. ½ tsp salt

1. 250 g cooked and cooled rice
2. 200 g sweetcorn
3. red pepper or tomatoes
4. 15 g coriander
5. 150 g mince cajun spiced stock
6. 1 small red onion
7. 280 g mixed beans
