...imagine if sushi and arancini had a baby - this would be it.

Crumble tofu with hands and add remaining ingredients, mix thoroughly.

Add rice vinegar to cooked sushi rice and spread some in hand, creating a well.

Add filling to rice and top with more rice.

Shape into a ball and set aside.

Dip ball into vegan egg mixture and then into seeded breadcrumbs.

Fry on all sides until golden brown.

Serve with Thai basil and gochujang/tomato sauce.
