Rinse your herbs and thoroughly dry/drain them. Add this to a food processor along with the garlic and fenugreek, and chop until fine.

Dry fry this in a pan on medium heat for 10-15mins, stirring intermittently to avoid sticking.

You want to draw out the moisture.

Fry the onions and then add the spices after a couple minutes.

Add in the soya chunks, tinned kidney beans and stock and let simmer for 15mins.

Add in the greens and stir through on low heat for another 5 minutes.
Notes
dried limes is the original, authentic option but tamarind is a milder, more easily accessible version that could be used if you don't have access to the former
