Peel and grate 2/3 russet potatoes.

Wash the grated potato in water to remove its starch.

Strain out the potato and dry in paper towels.

Melt some duck fat/clarified butter in a non-stick skillet on medium-high heat and press the grated potato into it.

Cover with a lid for 2-3 minutes if your rosti is thick.

Flip the rosti when it's golden brown and crispy, it should take 5-6 minutes.

Brown the other side and serve with your topping of choice. Be sure to season with salt and pepper.
