Scatter onion, carrots, and celery over the base of a roasting tin.

Separate the skin from the breasts and massage garlic butter under the skin.

Cook the outside/all over with more garlic butter.

Drizzle with olive oil and season with salt and black pepper.

Season the cavity of the chicken liberally with salt and pepper.

Stuff the chicken with lemon halves.

Put the chicken into the oven for 80-90 mins depending on your chicken weight.

Baste the chicken every 20 mins for the best results.
