Summer Cherry Corn Toast
I dont know y’all, I was a bit worried you’d think a bougie toast was boring but here I am with the season’s abundance in one single bite The key to this is the thick layer of @thelaughingcowusa Plant-Based Garlic & Herb cheese alternative.

Heat oil in a skillet over medium-low heat. Saute the onion and garlic until translucent, about 4-5 mins. Add the spices and saute until fragrant.

Add the cherry tomatoes and toss to coat. Pour 2 tablespoons of water into the pan, then season with salt and a pinch of sugar. Bring the heat up to medium and cook, covered, for 10 minutes. Once the tomatoes begin to burst, take the back of the spoon and smash them together. Keep stirring until a dip consistency comes to fruition. Add more salt if needed. Set aside

Make the corn salad by combining all of the ingredients until combined. Season with more salt if needed.
