Cut thin slices/pieces of tofu, bell pepper, onion, shiitake mushroom, and spring onions.

Rehydrate the shiitake mushroom (if using dry).

Heat oil in a pan and sauté the garlic.

Add the tofu, bell pepper, onion, and mushroom to the pan and stir-fry.

Add the sweet potato noodles and stir-fry until combined.

Add the spinach and stir-fry until wilted.

Season with salt and pepper to taste.

Serve hot and garnish with toasted sesame seeds.

Prepare the Japchae sauce by mixing together soy sauce, sesame oil, sugar, and black pepper.
