Sweet Chilli Chicken and Fried Rice
Such a classic fakeaway dish that makes my belly happy!

Put the rice into boil with a pinch of salt and the peas/broccoli.

Coat the diced chicken in salt, pepper and cornflour.

Add oil to a pan and then pour in the chicken.

Cook on a medium heat for around 6-8 minutes, until the chicken is cooked through and golden. Then remove from the pan.

In one pan, turn the heat low and crack in two eggs. Scrambled and then add in the rice and 1 tbsp soy sauce. Mix together.

Add to a pan the garlic, red chill, sweet chilli, ketchup and 2 tbsp soy sauce. Simmer until the sauce starts to thicken then add in the chicken. Mix together until the sauce nicely coats the chicken.

Serve the fried rice and sweet chilli chicken. Then top with spring onions, sesame seeds and red chilli slices!
