Creamy Pesto Chicken & Broccoli Rigatoni

This was my meal prepped dish for my office days last week. I love pesto pasta so this was a big winner and it reheated well.

    Fry off the diced bacon, once crispy, remove from the pan.

    Put the pasta and broccoli onto boil.

    Fry off the chicken in garlic granules, salt and pepper. Cook for 4-5 minutes. I like to shred my chicken.

    Add the stock, green pesto and creme fraiche. Simmer for 5 minutes before adding in the parmesan.

    Mix in the cooked pasta and broccoli before serving.

    Top with crispy bacon and a sprinkle of parmesan.
