Bacon and Leek Bucatini

Bacon and leek is one of my favourite pasta combinations! I can’t wait to eat more leeks this winter.

    Add the diced bacon to a pan along with a knob of butter. Cook until golden then remove from the pan. Also put the pasta into boil.

    Add in the leeks and cook for a few minutes until soft. Add in the chopped garlic, mixed herbs, salt and pepper.

    After a further minute add in the stock and creme fraiche. Simmer for 4-5 minutes, until the sauce starts to thicken.

    Add in the parmesan, most of the bacon and cooked pasta. Stir through until the sauce is coating the pasta.

    Serve with the rest of the bacon, parmesan and black pepper.
