Sausage & Chorizo Bucatini
What a better way to use two leftover sausages! This was spicy and I loved it!

Put the pasta to boil.

Add the sausages to a pan and break up with the back of your spoon. Fry off for about 3-4 minutes before adding in the chorizo and onion.

Season with chopped garlic, smoked paprika, chilli flakes, Italian herbs, salt and pepper. Cook for another few minutes until the sausage is cooked through.

Add in the tomato purée, chopped tomatoes and water. Simmer for 5 minutes.

Mix in the basil, soft cheese, a spoon of pasta water and the cooked pasta.

Serve topped with parmesan and basil.
