Peanut Gochujang Udon Noodles with Crispy Sausage

    To a pan add a splash of oil along with the sausages. Break up with a spatula and fry off the meat until it’s golden and then remove from the pan.

    Make up the sauce by mixing together the smooth peanut butter, gochujang, soy sauce, sesame oil, miso paste, lime juice, cornflour and water.

    Add the ginger, garlic, chilli paste and spring onion whites to the pan. Add in the noodles, I use ready to wok noodles but you can cook egg noodles and add these.

    Add the peanut gochujang sauce to the noodles and mix everything together. Add more water if needed.

    Serve the noodles topped with sausage meat, spring onions greens and sesame seeds.
