Hunters Chicken Loaded Potatoes

    Preheat the oven to 190c.

    Add the diced potato to an oven proof dish, splash over some oil and season BBQ seasoning, garlic salt and parsley. Add to the oven for 40-50 minutes, turning the potato’s half way.

    To a pan add the butter and bacon. Cook the bacon until golden and then remove from the pan.

    In the same pan add the onion, chopped garlic and paprika. Cook for 2-3 minutes until the veg starts to soften.

    Add in the chicken. Once the chicken is cooked through, add in the tomato purée, BBQ sauce and water. Simmer for 3-4 minutes and shred the chicken.

    Serve the potatoes topped with the chicken, cheese, BBQ sauce, crispy bacon and spring onions.
