Creamy Japanese Tan Tan Ramen (Tantanmen)

    Cook the ramen noodles per package instructions.

    Mix the soup base ingredients until a smooth consistency is achieved. Set this mixture aside

    Heat a pan over medium heat, add oil, garlic, and grated ginger. Stir until fragrant, then add the minced pork, breaking up any clumps as it cooks. Stir fry for 1min then add cooking wine, chilli bean paste, oyster sauce, and black pepper. Continue stir-frying for another 4-5 minutes or until the pork is fully cooked.

    In a small pot over medium heat, add chicken stock, then gradually add soy milk while stirring. Bring it to simmer, then pour the broth into the soup base bowl. Mix well together.

    Add your cooked ramen in the soup bowl. Top with blanched bok choy, stir-fried pork, ramen egg, and garnish with some chopped green onions and sesame seeds.
