    In a boiling pot, add udon and cook for 3 minutes or until the noodles are loosened.

    In a bowl, mix all the sauce ingredients together.

    In a pan, heat oil, then add garlic and green onion, stirring until fragrant. Save 1 tsp of the garlic and green onion oil to garnish the chicken later.

    Add chilli oil, then the udon, and pour in the sauce.

    Stir and mix well for 3 minutes so the udon noodles are fully coated with the sauce.

    Transfer to a serving plate, add the chicken, and drizzle with the reserved garlic and green onion oil.
