Chilli Peanut Ramen with Smashed Cucumber

Recently, I’ve come across a lot of cucumber recipes, so I made a creamy, spicy peanut ramen to pair with refreshing smashed cucumber. They complement each other perfectly, and the whole dish comes together in just 10 minutes.

Smashed Cucumber

Directions

    Place the cucumber on a cutting board and use a knife to gently smash it.

    Cut the cucumber into small, bite-sized pieces.

    Transfer the cucumber to a bowl, sprinkle with ½ tsp of salt, mix well, and let it sit for 10 minutes.

    Prepare the cucumber salad dressing by mixing all the seasonings listed above.

    After 10 minutes, drain the excess liquid from the cucumber and rinse it with water.

    Pour the dressing over the cucumber and toss to combine.

    Cook the ramen according to the package instructions, drain, and set aside.

    Mix all the ramen sauce ingredients, then add hot garlic oil, stirring until smooth.

    Add the hot noodles to the sauce and toss until fully coated.

    Top with the smashed cucumber and enjoy your dish!
