Creamy Nduja on Pot Pasta

A quick and easy dinner to make that tastes so lush. It’s spicy and creamy, super comforting and very easy to make.

    Tip the pasta in a large shallow pan and add the water, tomatoes, basil, ‘nduja, salami and tomato puree. Mix well and bring to the boil over a high heat. Cover, reduce the heat to low, and cook for 20 minutes or until most of the liquid is absorbed and the pasta al dente.

    Add the mascarpone, garlic powder and a good pinch of salt and pepper. Mix well. Turn the heat up a little so it’s just bubbling and cook, stirring regularly, for 3-5 minutes until the sauce is lovely and thick. Serve immediately with a little extra basil in each bowl.
