Autumn Gnocchi Traybake
A perfect quick and easy dinner to make when you need something low rent and delish.

Preheat the oven to 180c fan. Rub a little oil all over the base of a 24cm x 32cm baking tray. Chuck the gnocchi, squash, red onion, tomatoes, 1 tbsp oil and a good pinch of salt and pepper into the tray. Mix well. Pour int the wine and roast for 30-35 mins minutes or until the top is crispy and the bottom soft.

Rip over the blue cheese and dollop over the pesto. Return to the oven for 5 minutes or until the cheese has completely melted. Serve immediately with a little drizzle of oil.
