    Preheat the oven to 180 degrees fan.

    Coat your potatoes in a little oil, 1/2tbsp smoked paprika, 1tsp garlic salt, cayenne pepper salt & pepper & add to a tray, then place in the oven for 30 minutes until they start to colour on the edges.

    Remove the tray and add your peppers, red onion and courgettes and cook for 15 minutes.

    Meanwhile coat your chicken in harissa, 20g yoghurt, salt and pepper

    Next add your chicken to the tray and pop back in the oven for 15 minutes or until your chicken is cooked through, potatoes fluffy and crisp, courgettes, peppers and onion beautifully caramelised.

    Finish with feta, pomegranate seeds, garlic yoghurt and coriander & ENJOY
