Fall is a perfect time to dig into yummy toasted sandwiches.

    Drain the water, pat dry, and slice extra firm tofu into median thin planks.

    Combine all the ingredients for the glaze and stir.

  3. 3

    Assemble the tofu on a lined baking sheet.

    Brush the tofu with the glaze on one side. Bake for 15 mins at 350F.

    Flip the tofu, brush the glaze on the other side and bake for another 5mins (longer if desired).

    Toast the sandwich bread with some vegan mayo.

  7. 7

    Add tofu to a pan with some vegan cheese. Once cheese and tofu begins heating up add a splash of water and cover to help it melt.

    Assemble your sub with some more vegan mayo, your tofu and cheese, and lastly spinach.
