Directions

    Mix all-purpose flour, baking powder, baking soda, salt, sugar, salad oil, and water to form a dough. Allow the dough to rest multiple times, before shaping.

    Deep fry until golden and crispy.

    Whisk egg yolks with sugar until pale. Mix in cake flour, then gradually incorporate unsweetened soy milk. Cook over low heat until thick, then cool in the refrigerator.

    Whip cream and fold it into the cooled custard mixture.

    Dissolve sugar and agar agar in brewed American coffee. Pour into a shallow tray, sprinkle with edible flowers before the jelly sets.

    Slice the youtiao in half and generously pipe the soy milk custard inside.

    Drizzle with chili oil and sprinkle with chives. Cover with the other half of the youtiao.

    Place a piece of coffee jelly on top of the youtiao.
