Dissolve agar agar and sugar in water and bring to a boil. Add sake and pour into a mold to set.

Heat cream, milk, and sugar in a saucepan until hot but not boiling. Dissolve gelatin in the mixture, cool it down, then add crumbled fermented tofu. Charge into an espuma gun to create a light foam.

Cook bitter melon until soft, blend with sugar and water mixture. Freeze partially, then blend again. Repeat this process three times for a smooth texture.
