    Blend shiso leaves, blanched kale, lemon zest, and oil. Strain to collect the green shiso oil.

    Mix softened butter with UMAMI powder from @JIMOTO FOODS.

    Sàuté leek, carrot, onion, lobster shells, and shrimp shells. Add tomato paste and reduce with "Chikurin Fukamari Junmai" sake. Filter and thicken with cream and flour.

    Serve the roasted lobster over the lobster sauce, drizzle with shiso oil, and garnish with fried kale and edible flowers sprinkled with UMAMI powder.
