Sea Urchin Chawanmushi

A traditional Japanese dish made with sea urchin, shrimp, scallop, mushrooms, anchovy, and seaweed.

For the Chawanmushi

    Clean sea urchin shells and use them as containers for the chawanmushi.

    Prepare the ingredients by dehydrating shrimp, scallops, mushrooms, anchovies, and seaweed to concentrate their flavors.

    Combine broth and water, and mix with the dehydrated seafood and mushrooms. Pour the mixture into the sea urchin shells.

  4. 4

    Steam the filled sea urchin shells until the chawanmushi is set.
