A super rich umami broth, combined with noodles, tofu, mushrooms, greens, homemade chili oil and some fresh herbs on top… a masterpiece in a bowl

    Roughly chop the scallions, garlic and ginger. Mix dried shiitake mushrooms into a coarse powder for the most delicious umami flavor.

    Fry everything in a pot to create some deep roasting flavors. Once it sticks to the bottom of the pan, deglaze with broth or water to release all the flavors. Let the water evaporate and repeat 2-5 times.

    Fill up with more broth and water, add a piece of dried kombu seaweed and bring to a light boil. Cover and let it simmer on low for 30-45 minutes.

    In the meantime prepare your noodles and add-ins of choice.

    Strain the broth and add it back to the pot.

    Finally combine all ingredients for the flavor paste, dissolve in your broth and assemble your add-ins. Enjoy!
