Cabbage is a fantastic winter vegetable that can easily become the star on your table!

    Preheat oven to 160°C.

    Cut the cabbage into wedges.

    Fry wedges in a hot pan with a generous pinch of salt and oil until caramelized from both sides. If necessary work in batches.

    Mix all ingredients for the tomato butter, then spread onto the cabbage. Add water to the pan or baking dish, then bake without a lid for 45-60 minutes until most of the water has evaporated and the cabbage is soft and caramelized.

    Serve on vegan labneh or some rice with fresh herbs such as parsley or cilantro. Enjoy!
