Roasted Pumpkin Soup
This pumpkin soup is an annual classic and the perfect way to start cozy season!

Remove the seeds of the pumpkin and cut into pieces. Roughly chop the onion and cut off the top of the garlic bulb.

Place everything on a baking tray, add the spices and oil, then bake at 200°C until well browned. Be careful not to burn the garlic.

Transfer to a blender or pot, squeeze the garlic, add broth and blend until smooth.

Add coconut milk or cream, season with lemon juice and salt to taste.

Bring to a simmer and serve with some fresh garlic bread or however you like. Enjoy!
