Pulled Mushroom Tacos

Smoky mushrooms that have been boiled and sautéed to create a super deep flavor, paired with a fragrant salsa verde, some avocado and onion in a corn tortilla

    Shred the mushrooms using a fork.

    In a hot pan fry the onion until translucent, then add the mushrooms, garlic, chipotle and sauté for a couple of minutes. Add the veg stock to the pan and boil for 30-45 minutes until the liquid has evaporated. Sauté the mushrooms to create some deep roasting flavors.

    For the salsa, char the onion, jalapeños and pepper. Preferably on an open flame if you have a gas burner. Blend with the remaining ingredients into a rough puree.

    Toast the tacos in a hot pan.

    Assemble the tacos and enjoy!
