Vegan pea-ricotta filling

In a blender mix spinach and water, then combine all ingredients for the pasta dough in a bowl. Knead well for about 10 minutes until super smooth. Cover the dough and let it rest in the fridge for 1 hour.

In the meantime prepare the vegan ricotta filling. Just add all ingredients to a blender and mix until smooth.

Cut the dough in half, then roll it out as thin as possible. Cut out circles using a ring mold.

Stretch into an oval shape, then add the filling, fold over the dough and seal well. Now place the ravioli on the sealed dough and make indents with your thumb and index finger. Cut off any excess dough. Dust with flour and set aside.

Boil in well salted water for about 3 minutes.

Transfer to a pan to toss in some aromatic butter. Enjoy immediately!
Notes
You can prepare a large batch and freeze the ravioli for up to 3 months.
