Mushroom Walnut 'Meatballs' in Tomato Sauce

    Fry the mushrooms in a hot pan until the water has evaporated and the mushrooms have got some nice color. Add the capers, onion, walnuts and garlic and sauté. Deglaze with tomato puree and soy sauce, then remove from heat.

    Place everything in a blender and blend into a rough puree.

    Transfer the mixture to a bowl, season with herbs and spices and add the breadcrumbs.

    Shape into small balls.

    Either fry in a little oil or bake in the oven at 200°C until crispy.

    Prepare the tomato sauce, cook the spaghetti and combine in a pan.

    Serve with fresh basil, fried capers or vegan parmesan. Enjoy!
