Super Simple Banana Muffins
I love having these simple recipes to make together with my daughter now that she’s really interested in being in the kitchen. These banana muffins are simple to make and so delicious!

Preheat the oven to 350°F and lightly grease a 12-cup muffin tin.

In a small bowl, combine the flaxseed and warm water and set aside to thicken for 5 minutes.

Once set up combine the flax with the mashed bananas, almond milk, apple cider vinegar, maple syrup, oil, and vanilla and stir well to combine.

In a large bowl, combine the flour, almond flour, cinnamon, cardamom, nutmeg, baking powder, baking soda, and salt.

Whisk to make sure there are no clumps.

Add the wet ingredients to the bowl of dry ingredients and stir just until combined. Do not overmix.

Fold in the chocolate chips then divide the batter into the muffin tin.

Bake for 18 to 20 minutes or until a toothpick comes out almost clean.

Let cool for 15 minutes, then transfer to a wire rack to continue cooling.
