    Prep kale: wash, dry, de-stem, mince, and mix with cabbage.

    Toast breadcrumbs: blitz bread into crumbs, toast in a pan with garlic and 1 Tbsp olive oil, stirring constantly until golden.

    Make dressing: combine lemon zest, juice, olive oil, honey, mustard, salt, and pepper.

    Massage dressing into the kale and cabbage. Top with toasted breadcrumbs and parmesan. Enjoy!
