Make Ahead Salads
These have been my go-to lately when I want a really tasty and nutritious lunch. I love that the dressing marinates the beans and feta. It’s so freaking good!

Make a dressing in the base of your container with 1-2 Tbsp of olive oil, 2 tsp vinegar and a good pinch of whatever seasonings you like.

Add some beans, leftover chicken, and feta cheese.
- 3
Add some of your favourite veggies and pepperoncinis.
- 4
Top everything with some fresh herbs and a big handful of arugula.
- 5
Store in the fridge until you’re ready to eat!
Notes
These are easy to make in the morning, night before or even a few days in advance. They pack up so well and are so freaking delicious!
