Banana Bread Pancakes with Caramelised Peaches & Cottage Cheese

    Mash the banana with a fork, beat the egg and mix all of the ingredients except for the garnishes.

    Heat a non-stick pan and using a spoon pour the batter to form pancakes (you can add tiny amount of coconut oil if you want to fry them).

    Bake each side for 1 minute until they turn golden-brown.

  4. 4

    Add the peach slices with just a tiny bit of oil and brown sugar (optional) to the pan and caramelise on both sides.

    Plate the pancakes and garnish with the cheese and peaches.
